- 11 tbsp oil
- 7 pounded garlic cloves
- 5 pounded shallots
- 1 tbsp chili powder
- 1/2 lemon peel
- 1 tbsp tamarind mix with 120 ml water, reserve liquid and discard pulp
- 1/2 kg roasted and grounded peanuts
- 450 ml water
- 7 tbsp sugar
- 1 1/2 tbsp salt
Methods / instructions
- Heat oil and stir fry garlic, shallots, chili powder and lemon peel.
- Remove lemon peel, stir in tamarind liquid and simmer for 1 minute.
- Add in remaining ingredients, bring to boil and cook until sauce thickens.
- Serve with mutton satay, chicken satay, beef satay or pork satay.
