Mixed vegetables with coconut milk recipe

Ingredients /nutrition

  • 4 1/2 tbsp oil
  • 4 sliced garlic cloves
  • 8 sliced shallots
  • 1 tsp chili powder mix with 1 tbsp water
  • 1 green pepper, cut into strips
  • 1 paprika, cut into strips
  • 180 g peeled prawns
  • 1/2 coconut, grated, add 660 ml water to squeeze liquid, discard pulp
  • 3/4 tsp salt
  • 1 tbsp sugar
  • 2 eggplants, diced and soaked in salted water
  • 4 cabbage leaves, cut into pieces
  • 4 slices turnips, cut into pieces
  • 14 sliced French beans
  • 1 carrot, cut into strips
  • 10 sliced long beans

Methods / instructions

  1. Heat oil in a frying pan and stir fry shallots and garlic.
  2. Add in chili paste, green pepper, paprika and prawns.
  3. Stir fry for 5 seconds and add in 6 tbsp coconut milk.
  4. Add in remaining ingredients, bring to boil and simmer for 7 minutes.
  5. Serve immediately.
