Ingredients /nutrition
- 4 1/2 tbsp oil
- 4 sliced garlic cloves
- 8 sliced shallots
- 1 tsp chili powder mix with 1 tbsp water
- 1 green pepper, cut into strips
- 1 paprika, cut into strips
- 180 g peeled prawns
- 1/2 coconut, grated, add 660 ml water to squeeze liquid, discard pulp
- 3/4 tsp salt
- 1 tbsp sugar
- 2 eggplants, diced and soaked in salted water
- 4 cabbage leaves, cut into pieces
- 4 slices turnips, cut into pieces
- 14 sliced French beans
- 1 carrot, cut into strips
- 10 sliced long beans
Methods / instructions
- Heat oil in a frying pan and stir fry shallots and garlic.
- Add in chili paste, green pepper, paprika and prawns.
- Stir fry for 5 seconds and add in 6 tbsp coconut milk.
- Add in remaining ingredients, bring to boil and simmer for 7 minutes.
- Serve immediately.
