- 4 tbsp vegetable oil
- 1 tsp chopped garlic
- 1 tsp chopped ginger
- 1 tsp chopped salted black beans
- 1 tsp chopped chilies
- 220 g thinly sliced bitter gourd
- 80 g thinly sliced beef
- 1/4 onion, cut into wedges
- 3 stalks sliced scallion, white part only
- 8 slices carrot
- 2 tsp Chinese cooking wine
- 1/4 cup chicken stock
- 1/4 tsp salt
- 1/2 tsp sugar
- 1 tsp tapioca flour mixed with 2 tbsp water
Methods / instructions
- Heat up oil in a wok and stir fry garlic, ginger, black bean and chilies until fragrant.
- Stir in bitter gourd for 2 minutes and add remaining ingredients.
- Simmer until gravy thickens.
- Serve hot with boiled fragrant rice.
