Ingredients /nutrition
- 3 tbsp vegetable oil
- 6 minced shallots
- 1 tbsp minced garlic
- 60 g dried shrimps, soaked to soften
- 350 g yam, cut into cubes
- 150 g cleaned and shredded pork belly
- 580 g fragrant rice
- 1/2 tbsp chicken seasoning powder
- salt to taste
- 1/2 tsp sugar
- 1/2 tsp dark soy sauce
- 1/2 tsp pepper
- 850ml water
- 1 bunch chopped coriander
- 1 stalked sliced scallions
- 2 tbsp fried shallots
Methods / instructions
- Heat oil and saute shallots and garlic until fragrant.
- Add dried shrimps, pork and yam. Stir for 3 minutes.
- Add in rice and seasoning ingredients.
- Pour the content into electric rice cooker and add in water.
- When yam rice is cooked, add in remaining ingredients on top and serve immediately.
