Ingredients /nutrition
- 4 dried red chilies
- 1 3/4 tsp roasted shrimp paste
- 1 chopped onion
- 1 pc galangal
- 4 finely chopped garlic cloves
- 1 sliced lemon grass stalk
- 7 candlenuts
- 1 tsp paprika
- 3 1/2 tbsp vegetable oil
- 360 ml water
- 1 kg cleaned mussels
Methods / instructions
- Soak dried chilies in hot water until soften and add in blender.
- Add shrimp paste, onion, galangal, 3/4 amount of garlic, lemon grass, candlenuts and paprika into the blender. Process to form a smooth paste.
- In a large frying pan, heat oil and brown remaining garlic.
- Add spice paste and cook for 3 minutes.
- Pour water, bring to boil and stir in mussels.
- Cover and cook for 5 minutes until all mussels are opened.
- Serve hot.
