Spicy mussels recipe

Ingredients /nutrition

  • 4 dried red chilies
  • 1 3/4 tsp roasted shrimp paste
  • 1 chopped onion
  • 1 pc galangal
  • 4 finely chopped garlic cloves
  • 1 sliced lemon grass stalk
  • 7 candlenuts
  • 1 tsp paprika
  • 3 1/2 tbsp vegetable oil
  • 360 ml water
  • 1 kg cleaned mussels

Methods / instructions

  1. Soak dried chilies in hot water until soften and add in blender.
  2. Add shrimp paste, onion, galangal, 3/4 amount of garlic, lemon grass, candlenuts and paprika into the blender. Process to form a smooth paste.
  3. In a large frying pan, heat oil and brown remaining garlic.
  4. Add spice paste and cook for 3 minutes.
  5. Pour water, bring to boil and stir in mussels.
  6. Cover and cook for 5 minutes until all mussels are opened.
  7. Serve hot.
