- 7 eggs
- 1 tsp fish sauce
- 1 1/2 tsp brown sugar
- 1 tbsp peanut oil
- 80 g finely chopped bamboo shoots
- 1 finely chopped garlic clove
- 1 tsp grated root ginger
- 2 thinly sliced scallions
- 3 tbsp chopped coriander
- 190 g cooked shrimps
Methods / instructions
- Beat eggs, fish and sugar in a mixing bowl and set aside.
- Heat 1/2 tbsp oil in a wok and stir fry bamboo shoots, garlic, ginger and scallions for 2 1/2 minutes.
- Remove pan from heat and stir in coriander and shrimps.
- Pour egg mixture over and stir well.
- In a frying pan, heat remaining oil and pour egg mixture evenly.
- Lower heat and cook until golden brown.
- Serve hot.
