Prawn omelet recipe

Ingredients /nutrition

  • 7 eggs
  • 1 tsp fish sauce
  • 1 1/2 tsp brown sugar
  • 1 tbsp peanut oil
  • 80 g finely chopped bamboo shoots
  • 1 finely chopped garlic clove
  • 1 tsp grated root ginger
  • 2 thinly sliced scallions
  • 3 tbsp chopped coriander
  • 190 g cooked shrimps

Methods / instructions

  1. Beat eggs, fish and sugar in a mixing bowl and set aside.
  2. Heat 1/2 tbsp oil in a wok and stir fry bamboo shoots, garlic, ginger and scallions for 2 1/2 minutes.
  3. Remove pan from heat and stir in coriander and shrimps.
  4. Pour egg mixture over and stir well.
  5. In a frying pan, heat remaining oil and pour egg mixture evenly.
  6. Lower heat and cook until golden brown.
  7. Serve hot.
