Mixed vegetable curry recipe

Ingredients /nutrition

  • oil for stir frying
  • 4 shallots
  • 4 cloves garlic
  • 1 pc ginger
  • 2 cm pc dried shrimp paste
  • 6 dried chilies
  • 1 tbsp turmeric powder
  • 1 cinnamon stick
  • 1 star anise
  • 1 dried assam slice
  • 6 tbsp curry powder
  • 200 g chicken, cut into bite size pieces
  • 3 potatoes, cut into quarters
  • salt and sugar to taste
  • 300 g boiled dhal
  • 550 ml coconut milk
  • 5 sliced long beans
  • 1 diced brinjal
  • 1 diced carrot
  • 15 g mustard seeds

Methods / instructions

  1. Heat oil in a heavy pan. Stir fry the next 10 ingredients after oil from the ingredient list until fragrant.
  2. Add in chicken, potatoes, salt and sugar. Cover and cook for 5 minutes.
  3. Add remaining ingredients and cook until it boils.
  4. Serve immediately.
