Fried koay teow noodles recipe

Ingredients /nutrition

  • 4 shallots
  • 5 cloves garlic
  • 1 pc ginger
  • 2 cm dried shrimp paste
  • 2 tbsp oil
  • 2 tbsp oyster sauce
  • 4 tbsp chili paste
  • 3 eggs
  • 500 g boiled cockles flesh
  • some water
  • salt to taste
  • 50 g shredded mustard greens
  • 800 g koey teow or noodles
  • 50 g bean sprouts
  • 4 tbsp sweet soya sauce
  • 2 sliced red chilies
  • 40 g shredded spring onions

Methods / instructions

  1. Ground the first 4 ingredients and stir fry in hot oil until fragrant.
  2. Stir in oyster sauce, chili paste, cockles and eggs.
  3. Pour in some water and allow to boil.
  4. Add in remaining ingredients and cook until all ingredients are well mixed.
  5. Serve immediately.
