Butter mantis prawn recipe

Ingredients /nutrition

  • 550 g mantis prawns flesh
  • 1 lightly beaten egg yolk
  • 1/2 bowl self raising flour
  • vegetable oil for deep frying
  • 2 tbsp butter
  • 55 g sliced celery
  • 2 stalks sliced scallions
  • 1/2 stalk shredded leek
  • 1/2 tsp salt
  • 1/2 tsp sugar

Methods / instructions

  1. Dip mantis prawns in egg and coat with flour.
  2. Deep fry in hot oil until golden brown.
  3. Remove from heat and drain on kitchen paper towel. Set aside.
  4. Melt butter in non stick frying pan and add in remaining ingredients.
  5. Stir fry for 2-3 minutes and return mantis prawns in pan.
  6. Stir well and serve immediately.
