Ingredients /nutrition
- 550 g mantis prawns flesh
- 1 lightly beaten egg yolk
- 1/2 bowl self raising flour
- vegetable oil for deep frying
- 2 tbsp butter
- 55 g sliced celery
- 2 stalks sliced scallions
- 1/2 stalk shredded leek
- 1/2 tsp salt
- 1/2 tsp sugar
Methods / instructions
- Dip mantis prawns in egg and coat with flour.
- Deep fry in hot oil until golden brown.
- Remove from heat and drain on kitchen paper towel. Set aside.
- Melt butter in non stick frying pan and add in remaining ingredients.
- Stir fry for 2-3 minutes and return mantis prawns in pan.
- Stir well and serve immediately.
