- 5 chopped garlic cloves
- 3 chopped shallots
- 1 pc chopped root ginger
- 3/4 cups coconut milk
- 2 tsp ground cumin
- 1/4 tsp ground turmeric
- 2 tsp ground coriander
- 1 1/2 tsp vegetable oil
- 5 cardamom pods
- 5 star anise
- 5 dried red chilies
- 1 cinnamon stick
- 4 cloves
- 18 curry leaves
- 4 chicken thighs
- 4 drumsticks
Methods / instructions
- Combine the first 7 ingredients in a food processor or a blender and make a fine puree.
- In a large heavy saucepan, heat oil and add in remaining ingredients except chicken.
- Stir fry until fragrant, bring to boil and add in chicken.
- Bring to simmer and cook gently, uncover, for 45 minutes.
- Serve hot with fragrant rice.
