Braised spice chicken recipe

Ingredients /nutrition

  • 5 chopped garlic cloves
  • 3 chopped shallots
  • 1 pc chopped root ginger
  • 3/4 cups coconut milk
  • 2 tsp ground cumin
  • 1/4 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 1/2 tsp vegetable oil
  • 5 cardamom pods
  • 5 star anise
  • 5 dried red chilies
  • 1 cinnamon stick
  • 4 cloves
  • 18 curry leaves
  • 4 chicken thighs
  • 4 drumsticks

Methods / instructions

  1. Combine the first 7 ingredients in a food processor or a blender and make a fine puree.
  2. In a large heavy saucepan, heat oil and add in remaining ingredients except chicken.
  3. Stir fry until fragrant, bring to boil and add in chicken.
  4. Bring to simmer and cook gently, uncover, for 45 minutes.
  5. Serve hot with fragrant rice.
