Tofu coconut curry recipe

Ingredients /nutrition

  • 1 tsp crushed ginger
  • 1 1/2 tsp crushed garlic
  • 1/2 cup cashew nuts
  • 2 tsp finely chopped lemon grass
  • 2 onions, cut into quarters
  • 1 thinly sliced red chili
  • 2 1/2 tbsp curry powder
  • 2 1/2 tbsp olive oil
  • 2 cups tofu, cut into cubes
  • 1 can coconut milk
  • 3 3/4 cups water
  • 3 cups potatoes, cut into cubes
  • 1 tsp sugar
  • salt and ground black pepper to taste

Methods / instructions

  1. Combine the first 7 ingredients in a blender or food processor and grind into paste.
  2. Heat oil and saute ground paste until fragrant.
  3. Add remaining ingredients and cook approximately 25 minutes until potato is tender.
  4. Serve hot.
