Ingredients /nutrition
- 1 tsp crushed ginger
- 1 1/2 tsp crushed garlic
- 1/2 cup cashew nuts
- 2 tsp finely chopped lemon grass
- 2 onions, cut into quarters
- 1 thinly sliced red chili
- 2 1/2 tbsp curry powder
- 2 1/2 tbsp olive oil
- 2 cups tofu, cut into cubes
- 1 can coconut milk
- 3 3/4 cups water
- 3 cups potatoes, cut into cubes
- 1 tsp sugar
- salt and ground black pepper to taste
Methods / instructions
- Combine the first 7 ingredients in a blender or food processor and grind into paste.
- Heat oil and saute ground paste until fragrant.
- Add remaining ingredients and cook approximately 25 minutes until potato is tender.
- Serve hot.
