Ingredients /nutrition
- 7 oz tofu, drained, cubed and browned in oil
- 1 tsp soy sauce
- 3 minced garlic cloves
- 5 chopped green onions
- 1/2 cup chopped cilantro
- 1 kaffir lime leaf
- 3/4 tsp sea salt
- 11 thick stalks lemongrass
- 2 lightly beaten eggs
- vegetable oil for deep frying
Methods / instructions
- Season tofu with soy sauce and set aside for 5 minutes.
- Combine tofu together with garlic, green onion, cilantro, lime leaf and salt in a food processor or electric blender.
- Process until form a smooth paste.
- Spilt lemon grass stalk into 2 and stuff mixture into cavity before cover with another lemon grass.
- Coat each piece with eggs and deep fry in oil until browned.
- Serve hot.
