Stuffed lemon grass recipe

Ingredients /nutrition

  • 7 oz tofu, drained, cubed and browned in oil
  • 1 tsp soy sauce
  • 3 minced garlic cloves
  • 5 chopped green onions
  • 1/2 cup chopped cilantro
  • 1 kaffir lime leaf
  • 3/4 tsp sea salt
  • 11 thick stalks lemongrass
  • 2 lightly beaten eggs
  • vegetable oil for deep frying

Methods / instructions

  1. Season tofu with soy sauce and set aside for 5 minutes.
  2. Combine tofu together with garlic, green onion, cilantro, lime leaf and salt in a food processor or electric blender.
  3. Process until form a smooth paste.
  4. Spilt lemon grass stalk into 2 and stuff mixture into cavity before cover with another lemon grass.
  5. Coat each piece with eggs and deep fry in oil until browned.
  6. Serve hot.
