Ingredients /nutrition
- 1 peeled and shredded fresh root ginger
- 1 3/4 tbsp vegetable oil
- 2 peeled and chopped garlic cloves
- 4 chicken thighs, cut into bite size pieces
- 1 1/2 tbsp fish sauce
- 3/4 tsp sugar
- salt to taste
Methods / instructions
- Sprinkle ginger with salt and allow to stand for 15 minutes. Squeeze and discard liquid.
- Rinse ginger with water and squeeze out liquid.
- Heat oil in a frying pan, stir fry garlic until lightly browned.
- Stir in ginger and stir fry for a minute.
- Add in remaining ingredients, cover and cook over medium heat for 15 minutes.
- Serve immediately with boiled fragrant rice.
