Stir fry ginger chicken recipe

Ingredients /nutrition

  • 1 peeled and shredded fresh root ginger
  • 1 3/4 tbsp vegetable oil
  • 2 peeled and chopped garlic cloves
  • 4 chicken thighs, cut into bite size pieces
  • 1 1/2 tbsp fish sauce
  • 3/4 tsp sugar
  • salt to taste

Methods / instructions

  1. Sprinkle ginger with salt and allow to stand for 15 minutes. Squeeze and discard liquid.
  2. Rinse ginger with water and squeeze out liquid.
  3. Heat oil in a frying pan, stir fry garlic until lightly browned.
  4. Stir in ginger and stir fry for a minute.
  5. Add in remaining ingredients, cover and cook over medium heat for 15 minutes.
  6. Serve immediately with boiled fragrant rice.
