Sour beef stew recipe

Ingredients /nutrition

  • 2 stalks thinly sliced lemon grass
  • 4 peeled garlic cloves
  • 6 shredded lime leaves
  • 3 1/2 tbsp tamarind paste
  • 1 tbsp turmeric powder
  • 2 tbsp dried galingale, soaked in hot water for 45 minutes
  • 1 red chili
  • 2 1/2 tbsp fish paste
  • 2 tbsp vegetable oil
  • 2 1/2 tbsp fish sauce
  • 1 kg stewing beef chunks
  • 130 ml water

Methods / instructions

  1. Place the first 7 ingredients in a mortar and pound to smooth paste.
  2. Strain fish paste through a sieve and discard pulp.
  3. Heat oil in pan and stir fry fish paste and pounded ingredients until fragrant.
  4. Add remaining ingredients, bring to boil and simmer gently for 1 1/2 hours.
  5. Add more water if required.
  6. Serve hot.
