- 2 stalks thinly sliced lemon grass
- 4 peeled garlic cloves
- 6 shredded lime leaves
- 3 1/2 tbsp tamarind paste
- 1 tbsp turmeric powder
- 2 tbsp dried galingale, soaked in hot water for 45 minutes
- 1 red chili
- 2 1/2 tbsp fish paste
- 2 tbsp vegetable oil
- 2 1/2 tbsp fish sauce
- 1 kg stewing beef chunks
- 130 ml water
Methods / instructions
- Place the first 7 ingredients in a mortar and pound to smooth paste.
- Strain fish paste through a sieve and discard pulp.
- Heat oil in pan and stir fry fish paste and pounded ingredients until fragrant.
- Add remaining ingredients, bring to boil and simmer gently for 1 1/2 hours.
- Add more water if required.
- Serve hot.
