Oyster mushroom & bamboo curry recipe

Ingredients /nutrition

  • 2 cups vegetable stock
  • 1 cup yanang extract
  • 3 tsp glutinous rice flour
  • 1 cup julienned bamboo shoots
  • 2 1/2 cups oyster mushrooms
  • 1 cup diced winter squash
  • 5 red Thai chilis
  • 2 tbsp shallots
  • 3 tbsp minced lemongrass, white parts only
  • 2 tbsp soy sauce
  • 2 thinly sliced scallions

Methods / instructions

  1. Combine the first 3 ingredients in a saucepan and bring to boil.
  2. Reduce heat and stir in remaining ingredients.
  3. Simmer gently until vegetables are tender.
  4. Serve hot.
