Ingredients /nutrition
- 2 cups vegetable stock
- 1 cup yanang extract
- 3 tsp glutinous rice flour
- 1 cup julienned bamboo shoots
- 2 1/2 cups oyster mushrooms
- 1 cup diced winter squash
- 5 red Thai chilis
- 2 tbsp shallots
- 3 tbsp minced lemongrass, white parts only
- 2 tbsp soy sauce
- 2 thinly sliced scallions
Methods / instructions
- Combine the first 3 ingredients in a saucepan and bring to boil.
- Reduce heat and stir in remaining ingredients.
- Simmer gently until vegetables are tender.
- Serve hot.
