Herb salad recipe

Ingredients /nutrition

  • 1 tbsp vegetable oil
  • 1 minced garlic clove
  • 1 cup diced tofu, browned in oil
  • 2 chopped green onions
  • 3/4 tbsp chopped cilantro
  • 1 stalk minced lemongrass, white part only
  • 1 cup chopped mint
  • 1/2 tsp. salt
  • 2 tbsp roasted and ground sticky rice
  • 2 thinly sliced chilies
  • 1/2 cup thinly sliced banana flower
  • 2 chopped long beans
  • 2 tbsp lime juice
  • 1 tbsp finely chopped fresh galangal

Methods / instructions

  1. Heat oil and saute garlic until brown.
  2. Combine remaining ingredients and stir until fragrant.
  3. Allow to cool prior serving.
