Claypot chicken recipe

Ingredients /nutrition

  • 1 1/2 tsp peanut oil
  • 7 slices ginger
  • 7 sliced and deep fried garlic cloves
  • 8 sliced shallots
  • 500 g chicken, cut into bite size pieces
  • 8 cups sliced mushroom
  • 2 tsp oyster sauce
  • 2 tsp dark soy sauce
  • 2 tsp sweet sherry
  • 1 tsp soya sauce
  • 1 pinch pepper
  • 2 cups chicken stock

Methods / instructions

  1. Heat peanut oil in claypot and brown ginger, garlic, shallots and chicken until cooked and fragrant.
  2. Add remaining ingredients and cook for a further 8 minutes.
  3. Serve hot with steamed rice.
