Sweet potato noodles recipe

Ingredients /nutrition

  • 35 g thinly sliced beef
  • 2 tbsp light soy sauce
  • 1 tbsp sugar
  • 2 tsp minced garlic
  • 2 1/2 tsp sesame oil
  • 3 tsp lightly toasted white sesame seeds
  • 25 g peeled and julienned onion
  • 25 g julienned carrot
  • 1 julienned green capsicum
  • salt to taste
  • 3 julienned shiitake mushrooms
  • 50 g dried sweet potato noodles
  • 2 tbsp light soy sauce
  • 2 tbsp sugar
  • 2 1/2 tbsp sesame oil
  • 1 tsp lightly toasted white sesame seeds

Methods / instructions

  1. Mix well the first 6 ingredients and set aside for 30 minutes.
  2. Stir fry onion, carrot and capsicum in a lightly greased pan.
  3. Season with salt and set aside.
  4. Pan fry marinated beef and mushroom.
  5. Meanwhile, boil noodles until soften and mix with soy sauce, sugar and sesame oil.
  6. Stir fry noodles with beef and vegetables for 3 minutes.
  7. Garnish with sesame seeds and serve immediately.
