- 1 chicken
- 4 dried chestnuts, soaked in water for 30 minutes and drained
- 4 baby potatoes
- 4 dried red dates
- 2 cloves garlic
- 1 slice ginger
- 1/2 tsp salt
- 1 3/4 cups water
- 3/4 tsp salt
- 1 fresh ginseng root
Methods / instructions
- Rinse chicken and pat dry with kitchen paper towel.
- Fill cavity with chestnuts, potatoes, red dates, garlic, ginger and salt.
- Close cavity by threading it with skewer.
- Place chicken in a high pressure cooker and add remaining ingredients.
- Cook for 22 minutes, reduce pressure and cook for a further 8 minutes.
- Serve immediately.
