Mushroom casserole recipe

Ingredients /nutrition

  • 550 g sliced assorted mushrooms (enoki, oyster, porcini and button)
  • 10 sliced shiitake mushrooms
  • 3 leaves sliced Chinese cabbage
  • 1/2 sliced red capsicum
  • 4 cups beef stock
  • 2 minced cloves garlic
  • 200 g thinly sliced beef sirloin
  • 1 thinly sliced leek, green part only
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Methods / instructions

  1. Add mushrooms, cabbage and capsicum in casserole dish.
  2. Bring beef stock to boil in a heavy saucepan and pour into casserole dish.
  3. Add garlic and simmer gently casserole dish mixture for 8 minutes.
  4. Add beef and cook for a further 4 minutes.
  5. Add leek and season well with salt and pepper.
  6. Serve hot with boiled fragrant rice.
