Ingredients /nutrition
- 1 tbsp sesame oil
- 3 tbsp glutinous rice, soaked 35 minutes and drained
- 600 g chicken
- 9 peeled gingko nuts
- 9 peeled chestnuts
- 5 Chinese dried red dates
- 1 dried ginseng root
- salt and pepper to taste
- 1 tbsp toasted pine nuts
Methods / instructions
- Combine sesame oil into glutinous rice.
- Stuff glutinous rice into chicken cavity and add in gingko nuts, chestnuts, dried dates and ginseng root.
- Close chicken cavity with wooden skewer.
- Place chicken into a pot and add enough water to cover.
- Bring to boil, reduce heat and simmer gently for 1 hour.
- Season well with salt and pepper.
- Garnish with toasted pine nuts and serve hot.
