Ginseng chicken soup recipe

Ingredients /nutrition

  • 1 tbsp sesame oil
  • 3 tbsp glutinous rice, soaked 35 minutes and drained
  • 600 g chicken
  • 9 peeled gingko nuts
  • 9 peeled chestnuts
  • 5 Chinese dried red dates
  • 1 dried ginseng root
  • salt and pepper to taste
  • 1 tbsp toasted pine nuts

Methods / instructions

  1. Combine sesame oil into glutinous rice.
  2. Stuff glutinous rice into chicken cavity and add in gingko nuts, chestnuts, dried dates and ginseng root.
  3. Close chicken cavity with wooden skewer.
  4. Place chicken into a pot and add enough water to cover.
  5. Bring to boil, reduce heat and simmer gently for 1 hour.
  6. Season well with salt and pepper.
  7. Garnish with toasted pine nuts and serve hot.
