Fish & vegetables hotpot recipe

Ingredients /nutrition

  • 4 cups water
  • 3/4 tbsp ground red pepper
  • 4 cloves garlic
  • 2 tsp grated ginger
  • 1 tsp salt
  • 180 g sliced daikon radish
  • 1 sliced zucchini
  • 1 sliced onion
  • 1 sliced leek
  • 300 g salmon, cut into pieces
  • 200 g sliced firm beancurd
  • 1 sliced red chili
  • 1 scallion, cut into lengths
  • 1 bunch chrysanthemum greens

Methods / instructions

  1. Combine the first 6 ingredients in a heavy saucepan and bring to boil.
  2. Reduce heat and simmer gently for 6 minutes.
  3. Add zucchini, onion and leak. Cook for a further 4 minutes.
  4. Add in salmon and cook for 5 minutes.
  5. Stir in beancurd and chili.
  6. Simmer for 2 minutes and add in remaining ingredients.
  7. Serve hot.
