Beef kimchi stew & tofu recipe

Ingredients /nutrition

  • 2 tsp vegetable oil
  • 280 g thinly sliced beef sirloin
  • 1 thinly sliced onion
  • 2 tsp minced garlic
  • 380 g sliced kimchi
  • 3 1/2 cups beef stock
  • 3/4 cup kimchi juice
  • 250 g sliced firm tofu
  • 3 tsp ground red pepper
  • 1 tbsp soy sauce
  • 1 1/2 tsp sugar
  • 1 sliced leek
  • 2 sliced scallions
  • 1 sliced red green chili

Methods / instructions

  1. Heat oil in a heavy saucepan and stir fry beef.
  2. Stir in onion, garlic, kimchi and stri fry for 3 minutes.
  3. Add in beef stock and bring to boil.
  4. Reduce heat and simmer gently for 1 minute.
  5. Add remaining ingredients and bring to boil, reduce heat and cook for 3 minutes.
  6. Serve immediately.
