Udon noodles recipe

Ingredients /nutrition

  • 500 g plain flour
  • 20 g salt
  • 175 ml water
  • 1 tsp vinegar
  • 1 tsp mirin
  • 1 egg

Methods / instructions

  1. Combine all ingredients and knead into dough.
  2. Cover dough with tea towel and set aside for 1 1/4 hours.
  3. Flatten dough with rolling pin to form a cylinder shape.
  4. Flatten again and fold it over several times.
  5. Cut dough into 1 cm strips.
  6. Expand noodle using your hands and shake during expanding to make noodle springy.
  7. Sprinkle some flour on top to prevent sticking.
  8. Noodles ready to cook.
