Ingredients /nutrition
- 500 g plain flour
- 20 g salt
- 175 ml water
- 1 tsp vinegar
- 1 tsp mirin
- 1 egg
Methods / instructions
- Combine all ingredients and knead into dough.
- Cover dough with tea towel and set aside for 1 1/4 hours.
- Flatten dough with rolling pin to form a cylinder shape.
- Flatten again and fold it over several times.
- Cut dough into 1 cm strips.
- Expand noodle using your hands and shake during expanding to make noodle springy.
- Sprinkle some flour on top to prevent sticking.
- Noodles ready to cook.
