- 3/4 tbsp sugar
- 60 ml mirin
- 120 ml soy sauce
- 120 ml sake
- 450 g diced chicken meat
- 150 g diced chicken liver
- 4 quartered shiitake mushrooms
- 2 diced bell peppers
- 1 sliced leek
- 18 skewers

Methods / instructions
- To make the sauce, mix the first 4 ingredients from the list in a heavy saucepan and bring to boil.
- Reduce heat and cook until the sauce is reduced to a cup.
- Thread chicken, liver, mushroom, leek and bell pepper onto skewers.
- Heat broiler and baste ingredients with sauce.
- Broil for 3 minutes and baste with sauce frequently.
- Remove from heat and sprinkle 7 spice chili powder on top.
- Serve immediately.
