- 300 g daikon
salt to taste
- 2 peeled and pureed kiwifruit
- 1 whole leaf mitsuba (trefoil)
- 1/2 tsp mirin
- 4 tbsp rice vinegar
- 3/4 tbsp castor sugar
- 3/4 tbsp salt
- 4 leaves mitsuba (trefoil)
- shredded nori
Methods / instructions
- Pell daikon and rub with salt.
- Trim both ends and dice the daikon.
- Prepare kiwi sauce by combining kiwi, mitsuba, mirin, vinegar, sugar and salt.
- Spoon dressing on serving plates.
- Add some diced daikon on the side and top with mitsuba leaf and nori.
