Daikon salad in kiwi fruit sauce recipe

Ingredients /nutrition

  • 300 g daikon salt to taste
  • 2 peeled and pureed kiwifruit
  • 1 whole leaf mitsuba (trefoil)
  • 1/2 tsp mirin
  • 4 tbsp rice vinegar
  • 3/4 tbsp castor sugar
  • 3/4 tbsp salt
  • 4 leaves mitsuba (trefoil)
  • shredded nori

Methods / instructions

  1. Pell daikon and rub with salt.
  2. Trim both ends and dice the daikon.
  3. Prepare kiwi sauce by combining kiwi, mitsuba, mirin, vinegar, sugar and salt.
  4. Spoon dressing on serving plates.
  5. Add some diced daikon on the side and top with mitsuba leaf and nori.
