Crab croquettes recipe

Ingredients /nutrition

  • 450 g peeled and diced potatoes
  • 1 finely chopped onion
  • 1 stalk finely chopped spring onion
  • 200 g crab meat
  • 60 ml fresh cream salt and pepper to taste
  • 60g plain flour
  • 1 lightly beaten egg
  • 50 g breadcrumbs
  • oil for deep-frying

Methods / instructions

  1. Boil potatoes in salted water until tender.
  2. Drain and mash until smooth.
  3. Add in onion, spring onion, crabmeat, cream, salt and pepper. Mix well and set aside.
  4. Season flour lightly with salt and pepper in a separate bowl,
  5. Make mash potatoes into patties and coat with flour.
  6. Dip in flour coated potato patties into lightly beaten egg and coat with breadcrumbs.
  7. Deep fry in hot oil until golden brown.
  8. Drain with kitchen paper towel and serve hot.
