- 450 g peeled and diced potatoes
- 1 finely chopped onion
- 1 stalk finely chopped spring onion
- 200 g crab meat
- 60 ml fresh cream
salt and pepper to taste
- 60g plain flour
- 1 lightly beaten egg
- 50 g breadcrumbs
- oil for deep-frying
Methods / instructions
- Boil potatoes in salted water until tender.
- Drain and mash until smooth.
- Add in onion, spring onion, crabmeat, cream, salt and pepper. Mix well and set aside.
- Season flour lightly with salt and pepper in a separate bowl,
- Make mash potatoes into patties and coat with flour.
- Dip in flour coated potato patties into lightly beaten egg and coat with breadcrumbs.
- Deep fry in hot oil until golden brown.
- Drain with kitchen paper towel and serve hot.
