Chawan mushi recipe

Ingredients /nutrition

  • 350 ml water
  • 3 in konbo
  • 30 g bonita flakes
  • 50 g chicken meat
  • 2 tsp sake
  • 2 tsp salt
  • 3 finely beaten eggs
  • 2 tsp light soy sauce
  • 2 mushrooms
  • 6 prawns
  • 4 slices naruto

Methods / instructions

  1. To make dashi, pour water into saucepan and add in konbo.
  2. Leave for 45 minutes and cook over medium heat for 25 minutes.
  3. Remove konbo and stir in bonita flakes. Simmer gently for 12 minutes,
  4. Remove bonita flakes and strain stock. Set aside.
  5. In a bowl, marinate chicken with sake and a teaspoon of salt for 20 minutes.
  6. Combine egg, remaining salt, light soy sauce and dashi mixture in a bowl.
  7. Strain egg mixture through fine sieve.
  8. Combine marinated chicken with egg mixture, mushrooms and prawns.
  9. Top with naruto, cover with lids and place in steamer.
  10. Steam over low heat for 16 minutes.
  11. Serve hot.
