- 350 ml water
- 3 in konbo
- 30 g bonita flakes
- 50 g chicken meat
- 2 tsp sake
- 2 tsp salt
- 3 finely beaten eggs
- 2 tsp light soy sauce
- 2 mushrooms
- 6 prawns
- 4 slices naruto
Methods / instructions
- To make dashi, pour water into saucepan and add in konbo.
- Leave for 45 minutes and cook over medium heat for 25 minutes.
- Remove konbo and stir in bonita flakes. Simmer gently for 12 minutes,
- Remove bonita flakes and strain stock. Set aside.
- In a bowl, marinate chicken with sake and a teaspoon of salt for 20 minutes.
- Combine egg, remaining salt, light soy sauce and dashi mixture in a bowl.
- Strain egg mixture through fine sieve.
- Combine marinated chicken with egg mixture, mushrooms and prawns.
- Top with naruto, cover with lids and place in steamer.
- Steam over low heat for 16 minutes.
- Serve hot.
