- 4 garlic cloves
- 150 g shallots
- 10 g fresh turmeric
- 10 g ginger
- 5 candlenuts
- vegetable oil
- 4 slices red snapper
- 1 sliced carrot
- 2 sliced onions
- 500 ml water
- 3 sliced green chilies
- 5 tbsp lemon juice
- 1 tbsp sugar
- 1 tsp salt
Methods / instructions
- Grind garlic, shallots, turmeric, ginger and candlenuts using a food processor or blender until form a smooth paste.
- Heat up oil and fry fish slices until golden brown. Set aside.
- Heat up oil and saute ground paste until aromatic.
- Stir in carrots, onions and water.
- Cook until carrots softened, return fish and add in remaining ingredients.
- Stir briefly and serve hot.
