- 500 g snapper, cut into bite size pieces
- juice of 1 lime
- 1 tsp salt
- vegetable oil
- 5 red chilies
- 6 shallots
- 2 garlic cloves
- 3 candlenuts
- 1 tsp chopped ginger
- 2 stalks lemon grass
- 1 tsp tamarind juice
- 1 tbsp sweet soy sauce

Methods / instructions
- Rub fish with lime juice and salt. Set aside for 30 minutes.
- Wash and drain the fish.
- Deep fry fish until golden brown.
- Remove from heat, drain on kitchen paper towel and set aside.
- Meanwhile, grind chilies, shallots, garlic, candlenuts and ginger using a food processor or blender.
- Heat up oil and saute ground paste until aromatic. Add remaining ingredients and cook briefly.
- Pour sauce over fried fish.
- Serve hot.
