Spicy fish recipe

Ingredients /nutrition

  • 500 g snapper, cut into bite size pieces
  • juice of 1 lime
  • 1 tsp salt
  • vegetable oil
  • 5 red chilies
  • 6 shallots
  • 2 garlic cloves
  • 3 candlenuts
  • 1 tsp chopped ginger
  • 2 stalks lemon grass
  • 1 tsp tamarind juice
  • 1 tbsp sweet soy sauce
  •  

Methods / instructions

  1. Rub fish with lime juice and salt. Set aside for 30 minutes.
  2. Wash and drain the fish.
  3. Deep fry fish until golden brown.
  4. Remove from heat, drain on kitchen paper towel and set aside.
  5. Meanwhile, grind chilies, shallots, garlic, candlenuts and ginger using a food processor or blender.
  6. Heat up oil and saute ground paste until aromatic. Add remaining ingredients and cook briefly.
  7. Pour sauce over fried fish.
  8. Serve hot.
