Seafood spice paste recipe

Ingredients /nutrition

  • 450 g sliced red chilies
  • 45 g sliced garlic
  • 250 g sliced shallots
  • 180 g sliced turmeric
  • 80 g sliced ginger
  • 150 g candlenuts
  • 200 g tomatoes, cut into halves
  • 2 tbsp crushed coriander (cilantro) seeds
  • 150 ml vegetable oil
  • 2 1/2 tbsp tamarind pulp
  • 3 bay leaves
  • 2 stalks lemon grass
  • 1/2 tbsp salt
  • 250 ml water

Methods / instructions

  1. In a food processor or blender, combine and process the first 9 ingredients in the list to form a smooth paste.
  2. Transfer the ground ingredients to a saucepan and stir in remaining ingredients.
  3. Simmer gently for 45 minutes.
  4. Allow to cool completely before storing in an air tight container.
