- 450 g sliced red chilies
- 45 g sliced garlic
- 250 g sliced shallots
- 180 g sliced turmeric
- 80 g sliced ginger
- 150 g candlenuts
- 200 g tomatoes, cut into halves
- 2 tbsp crushed coriander (cilantro) seeds
- 150 ml vegetable oil
- 2 1/2 tbsp tamarind pulp
- 3 bay leaves
- 2 stalks lemon grass
- 1/2 tbsp salt
- 250 ml water
Methods / instructions
- In a food processor or blender, combine and process the first 9 ingredients in the list to form a smooth paste.
- Transfer the ground ingredients to a saucepan and stir in remaining ingredients.
- Simmer gently for 45 minutes.
- Allow to cool completely before storing in an air tight container.
