Ingredients /nutrition
- 1 tbsp plain flour
- 5 1/2 tbsp vegetable oil
- 200 g chopped shallots
- 30 g chopped ginger
- 5 chopped garlic cloves
- 1 tsp cumin powder
- 1 tsp fennel powder
- 1 tsp coriander powder
- 1 kg mutton
- 1.8 l water
- 2 tbsp diced Chinese celery
- 3 tbsp fried sliced shallots
- 1 cinnamon stick
- 1 star anise
- 4 cloves
- 4 cardamoms
- salt and ground black pepper to taste
Methods / instructions
- Fry plain flour without oil until brown and mix with 300 ml water.
- Heap up oil and saute shallots, ginger and garlic.
- Add in cumin powder, fennel powder and coriander powder and briefly stir until aromatic.
- Toss in mutton and fry for a minute.
- Pour in remaining water and bring to boil.
- Add remaining ingredients and cook until mutton is tender.
- Serve immediately.
