Mutton soup recipe

Ingredients /nutrition

  • 1 tbsp plain flour
  • 5 1/2 tbsp vegetable oil
  • 200 g chopped shallots
  • 30 g chopped ginger
  • 5 chopped garlic cloves
  • 1 tsp cumin powder
  • 1 tsp fennel powder
  • 1 tsp coriander powder
  • 1 kg mutton
  • 1.8 l water
  • 2 tbsp diced Chinese celery
  • 3 tbsp fried sliced shallots
  • 1 cinnamon stick
  • 1 star anise
  • 4 cloves
  • 4 cardamoms
  • salt and ground black pepper to taste

Methods / instructions

  1. Fry plain flour without oil until brown and mix with 300 ml water.
  2. Heap up oil and saute shallots, ginger and garlic.
  3. Add in cumin powder, fennel powder and coriander powder and briefly stir until aromatic.
  4. Toss in mutton and fry for a minute.
  5. Pour in remaining water and bring to boil.
  6. Add remaining ingredients and cook until mutton is tender.
  7. Serve immediately.
