Fish in coconut milk recipe

Ingredients /nutrition

  • 25 g galangal
  • 7 cloves garlic
  • 20 g ginger
  • 15 g turmeric
  • 4 candlenuts
  • 4 red chilies
  • vegetable oil
  • 2 stalks smashed lemon grass
  • 2 kaffir lime leaves
  • 1 turmeric leaf
  • 3 dried tamarind peel
  • 450 ml thin coconut milk
  • 550 g mackerel fish, cut into slices
  • 2 diced onions
  • 2 sliced green chilies
  • 150 ml thick coconut milk
  • 1 tsp salt
  • 1 tsp sugar

Methods / instructions

  1. Process the first 6 ingredients in the list using a food processor or a blender to form a smooth paste.
  2. Heat up cooking oil and saute the paste until aromatic.
  3. Add in lemon grass, kaffir leaves, turmeric leaf, tamarind peel and thin coconut milk.
  4. Bring content to boil under low heat.
  5. Add in remaining ingredients and simmer until fish is cooked.
  6. Serve hot.
