Crab curry recipe

Ingredients /nutrition

  • 4 red chilies
  • 1 tsp chopped ginger
  • 1 tsp chopped turmeric
  • 2 tsp chopped galangal
  • 2 tsp roasted coriander
  • 3 roasted candlenuts
  • 1/2 tsp roasted cumin
  • 1/4 tsp shrimp paste (belacan)
  • 3 garlic cloves
  • 5 shallots
  • 1 tsp tamarind juice
  • 3 tbsp vegetable oil
  • 1 stalk lemon grass
  • 1 bay leaf
  • 2 kaffir lime leaves
  • 1 l coconut milk
  • salt to taste
  • 4 crabs, cut into pieces

Methods / instructions

  1. To prepare spice paste, combine the first 11 ingredients from the list in a stone mortar, blender or food processor. Grind to form a smooth fine paste.
  2. Heat up oil and saute paste, lemon grass, bay leaf and lime leaves until aromatic.
  3. Pour in coconut milk and adjust seasoning with salt.
  4. Bring to boil and add in crabs.
  5. Reduce heat and simmer gently until cooked.
