- 1 chicken, cut into pieces
- 1 teaspoon tamarind juice
- 9 red chilies
- 4 garlic cloves
- 8 shallots
- 5 roasted candlenuts
- 1 tsp chopped ginger
- 1/2 tsp tamarind
- 3/4 tbsp salt
- 1 tbsp brown sugar
- 2 1/2 tbsp vegetable oil
- 2 bay leaves
- 1 stalk lemon grass
- 550 ml coconut milk
Methods / instructions
- Rub chicken with tamarind juice and set aside for 15 minutes.
- Meanwhile, add chilies, garlic, shallots, candlenuts, ginger, tamarind, salt and sugar in a blender or food processor. Grind until form a smooth paste.
- Heat up oil and saute paste, bay leaves and lemon grass until aromatic.
- Add chicken and pour in coconut milk.
- Cook until chicken is tender and sauce thickens.
- Serve hot.
