Chicken in sour sauce recipe

Ingredients /nutrition

  • 1 chicken, cut into pieces
  • 1 teaspoon tamarind juice
  • 9 red chilies
  • 4 garlic cloves
  • 8 shallots
  • 5 roasted candlenuts
  • 1 tsp chopped ginger
  • 1/2 tsp tamarind
  • 3/4 tbsp salt
  • 1 tbsp brown sugar
  • 2 1/2 tbsp vegetable oil
  • 2 bay leaves
  • 1 stalk lemon grass
  • 550 ml coconut milk

Methods / instructions

  1. Rub chicken with tamarind juice and set aside for 15 minutes.
  2. Meanwhile, add chilies, garlic, shallots, candlenuts, ginger, tamarind, salt and sugar in a blender or food processor. Grind until form a smooth paste.
  3. Heat up oil and saute paste, bay leaves and lemon grass until aromatic.
  4. Add chicken and pour in coconut milk.
  5. Cook until chicken is tender and sauce thickens.
  6. Serve hot.
