Beef in coconut milk recipe

Ingredients /nutrition

  • 80 g sliced red chilies
  • 80 g sliced shallots
  • 40 g sliced turmeric
  • 40 g sliced galangal
  • 30 g sliced garlic
  • 30 g sliced ginger
  • 30 g roasted and crushed candlenuts
  • 3/4 tsp crushed black peppercorns
  • 2 1/2 tbsp vegetable oil
  • 6 cups coconut milk
  • 2 stalks lemon grass
  • 1 turmeric leaf
  • 3 kaffir lime leaves
  • 700 g beef, cut into bite size pieces
  • salt to taste  

Methods / instructions

  1. Combine the first 8 ingredients from the list in a food processor, blender or stone mortar and grind coarsely.
  2. Heat up oil and saute ground paste until aromatic.
  3. Stir in coconut milk, lemon grass, turmeric and lime leaves.
  4. Bring to boil and add in beef.
  5. Reduce heat and simmer gently until beef is tender.
  6. Adjust seasoning with salt.
  7. Serve hot with boiled fragrant rice.
