Banana leaf roasted duck recipe

Ingredients /nutrition

  • 1 duck
  • 20 sliced shallots
  • 7 sliced garlic cloves
  • 3 sliced stalks lemon grass
  • 5 sliced kaffir lime leaves
  • 6 chopped candlenuts
  • 1 chopped ginger
  • 2 chopped fresh turmeric
  • 1 tsp crushed black peppercorns
  • 6 sliced bird's eye chili (cili padi)
  • 1 tsp crushed coriander seeds
  • 2 tsp dried shrimp paste (belacan)
  • 1 tbsp salt
  • 2 1/2 tbsp vegetable oil
  • banana leaves
  • aluminum foil for wrapping

Methods / instructions

  1. Combine all ingredients and wrap with banana leaves and foil.
  2. Steam for 50 minutes and transfer duck to an oven.
  3. Bake for half an hour at 180 degree C.
  4. Slice up duck meat with stuffing prior serving.
  5. Serve immediately.
