Zucchini pancakes recipe

Ingredients /nutrition

  • 1 1/2 cup grated zucchini
  • 1/2 cup grated carrot
  • 1/2 cup wheat flour
  • 1/2 cup chick pea flour
  • 1/4 cup finely chopped tomatoes
  • 1/2 cup grated onion
  • 3/4 tsp crushed garlic
  • 1/4 cup finely chopped coriander or parsley
  • 1/4 tsp bicarbonate of soda
  • 1 tsp green chili ginger paste
  • oil for frying
  • salt to taste

Methods / instructions

  1. Combine all ingredients and add water to make batter. Set aside for 20 minutes.
  2. Pour batter on non stick pan batch by batch and cook pancake until golden brown.
  3. Serve hot with honey or chutney.
