- 20 garlic cloves
- 1 bunch of coriander leaves
- 1 knob lightly crushed root ginger
- 1 tbsp grated lime zest
- 2 1/2 tbsp lime juice
- 4 lime leaves
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 50 ml vegetable oil
- 1 tbsp flour
- 1/2 tsp salt
- 100 g yogurt
- 450 g salmon fillet, cut into bite size pieces
- melted butter to baste

Methods / instructions
- Blend the first 8 ingredients from the ingredient list until form a smooth paste.
- Heat oil and cook flour for 1 1/2 minutes to form a roux.
- Stir in spice paste, salt and yogurt.
- Coat salmon with mixture and set aside for 1 1/4 hours.
- Preheat oven to 200 degree C and rest salmon on rack.
- Cook for 15 minutes and baste butter regularly.
- Serve hot with salad.
