Tandoori salmon recipe

Ingredients /nutrition

  • 20 garlic cloves
  • 1 bunch of coriander leaves
  • 1 knob lightly crushed root ginger
  • 1 tbsp grated lime zest
  • 2 1/2 tbsp lime juice
  • 4 lime leaves
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 50 ml vegetable oil
  • 1 tbsp flour
  • 1/2 tsp salt
  • 100 g yogurt
  • 450 g salmon fillet, cut into bite size pieces
  • melted butter to baste

Methods / instructions

  1. Blend the first 8 ingredients from the ingredient list until form a smooth paste.
  2. Heat oil and cook flour for 1 1/2 minutes to form a roux.
  3. Stir in spice paste, salt and yogurt.
  4. Coat salmon with mixture and set aside for 1 1/4 hours.
  5. Preheat oven to 200 degree C and rest salmon on rack.
  6. Cook for 15 minutes and baste butter regularly.
  7. Serve hot with salad.
