Ingredients /nutrition
- 250 g red lentils
- 2 tsp grated fresh ginger
- 3 finely chopped garlic cloves
- 1 chopped Thai chili
- 1 stalk chopped celery
- 3 tbsp chopped fresh cilantro
- 1 1/2 tbsp lemon juice
- 5 cups water
- 2 tsp tamarind paste
- 4 chopped shallots
- 1 chopped carrot
- 1/2 tsp garam masala
- 1/4 tsp ground turmeric
- 1/4 tsp ground coriander
- 1 tsp cumin seeds
Methods / instructions
- In a heavy saucepan, combine the first 11 ingredients from the ingredient lsit and bring to boil.
- Reduce heat, cover and simmer gently for 45 minutes.
- Transfer mixture into a food processor or blender and process until smooth.
- Return mixture to heat, add in remaining ingredients and cook for 6 minutes.
- Serve immediately with pappadams.
