Shrimp curry recipe

Ingredients /nutrition

  • 1 tbsp sunflower oil
  • 3/4 tsp chili powder
  • 1 tbsp ground sweet paprika
  • 1/2 tsp ground turmeric
  • 3 finely chopped garlic cloves
  • 1 1/2 tsp grated fresh ginger
  • 1 tbsp ground coriander
  • 3/4 tsp ground cumin
  • 1 1/4 cups water
  • 1 1/2 tsp packed brown sugar
  • 1 3/4 cups coconut milk
  • 3/4 tsp sea salt
  • 2 tbsp tamarind paste
  • 700 g jumbo shrimps

Methods / instructions

  1. Heat up oil and stir fry chili powder, paprika, turmeric, garlic, ginger, coriander and cumin until aromatic.
  2. Pour water and stir in brown sugar.
  3. Bring to boil, reduce heat and simmer gently for 5 minutes.
  4. Add remaining ingredients and cook for 5-6 minutes.
  5. Serve hot with boiled Basmati rice.
