Raisins & cashew nuts rice recipe

Ingredients /nutrition

  • 1 tbsp vegetable oil
  • 2 thinly sliced onions
  • 1/4 tsp salt
  • 1 cinnamon stick
  • 5 bruised green cardamoms
  • 1/2 tsp black peppercorns
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 2 cups washed Basmati rice
  • 1 1/2 tbsp raisins
  • 1 cup chopped toasted cashew nuts

Methods / instructions

  1. Heat oil in a saucepan and sweat onion until transparent.
  2. Add all ingredients except rice, raisins and nuts.
  3. Cook for 2 minutes.
  4. Add in rice and pour enough water to cover rice.
  5. Bring to boil, reduce heat, cover and simmer for 22 minutes.
  6. Allow to stand for 10 minutes before transfer to serving dishes.
  7. Top rice with raisins and cashew nuts.
  8. Serve hot.
