Ingredients /nutrition
- 1 tbsp vegetable oil
- 2 thinly sliced onions
- 1/4 tsp salt
- 1 cinnamon stick
- 5 bruised green cardamoms
- 1/2 tsp black peppercorns
- 1/2 tsp cumin seeds
- 1/2 tsp fennel seeds
- 2 cups washed Basmati rice
- 1 1/2 tbsp raisins
- 1 cup chopped toasted cashew nuts
Methods / instructions
- Heat oil in a saucepan and sweat onion until transparent.
- Add all ingredients except rice, raisins and nuts.
- Cook for 2 minutes.
- Add in rice and pour enough water to cover rice.
- Bring to boil, reduce heat, cover and simmer for 22 minutes.
- Allow to stand for 10 minutes before transfer to serving dishes.
- Top rice with raisins and cashew nuts.
- Serve hot.
