Ingredients /nutrition
- 2 tbsp vegetable oil
- 20 curry leaves
- 1 tsp mustard seeds
- 4 finely chopped garlic cloves
- 1 sliced red chili
- 550 g pumpkin, cut into cubes
- 50 ml water
- 1 tsp chili powder
- 1 tsp grounded roasted cumin
- 1 tsp grounded turmeric
- 1/2 tsp ghee
- 3/4 tbsp brown palm sugar
- salt to taste
Methods / instructions
- Heat up oil and add in curry leaves, mustard seeds, garlic and sliced chili.
- Stir fry for 1 minute and add in pumpkin cubes.
- Cook for further 1 minute and add remaining ingredients.
- Stir briefly for about 2 minutes.
- Serve hot with boiled rice or bread.
