Pumpkin chutney recipe

Ingredients /nutrition

  • 2 tbsp vegetable oil
  • 20 curry leaves
  • 1 tsp mustard seeds
  • 4 finely chopped garlic cloves
  • 1 sliced red chili
  • 550 g pumpkin, cut into cubes
  • 50 ml water
  • 1 tsp chili powder
  • 1 tsp grounded roasted cumin
  • 1 tsp grounded turmeric
  • 1/2 tsp ghee
  • 3/4 tbsp brown palm sugar
  • salt to taste

Methods / instructions

  1. Heat up oil and add in curry leaves, mustard seeds, garlic and sliced chili.
  2. Stir fry for 1 minute and add in pumpkin cubes.
  3. Cook for further 1 minute and add remaining ingredients.
  4. Stir briefly for about 2 minutes.
  5. Serve hot with boiled rice or bread.
