Prawns in coconut tamarind sauce recipe

Ingredients /nutrition

  • 1 tbsp coriander seeds
  • 4 dried red chilies, cut into pieces
  • 1/2 tsp black peppercorns
  • 3 1/2 tbsp sunflower oil
  • 1/2 tsp black mustard seeds
  • 5 fenugreek seeds
  • 1 finely chopped onion
  • 1 grated root ginger
  • 4 crushed garlic cloves
  • 2 chopped green chilies
  • 450 g cooked and peeled prawns
  • 3/4 tsp salt
  • 120 ml coconut milk
  • 10 curry leaves
  • 2 tbsp lime juice

Methods / instructions

  1. Process the first 3 ingredients from the ingredient list until smooth using a food processor or blender. Set aside.
  2. Heat oil and add in mustard seeds, fenugreek seeds, onion, ginger, garlic and chilies.
  3. Cook for 11 minutes and add in grounded ingredients.
  4. Cook for a minute and add remaining ingredients.
  5. Simmer gently for 5 1/2 minutes.
  6. Serve hot with boiled rice.
