Potato & pumpkin soup recipe

Ingredients /nutrition

  • 250 g skinned yellow pumpkin, cut into cubes
  • 2 skinned potatoes, cut into cubes
  • 3 diced onions
  • 450 ml chicken stock
  • salt and ground black pepper to taste  

Methods / instructions

  1. Combine pumpkin, potatoes and onions with chicken stock and cook over low heat until vegetables are soft.
  2. Remove from heat and pour vegetable mixture in a food processor or blender and process until smooth.
  3. Pour back mixture into pot and reheat for few minutes,
  4. Season well with salt and pepper.
  5. Serve hot with garlic bread.
