Pork curry recipe

Ingredients /nutrition

  • 9 dried chilies, soaked in hot water for 20 minutes and drained
  • 1/2 tbsp coriander seeds
  • 1 tsp black peppercorns
  • 1 tsp cumin seeds
  • 350 g pork belly, cut into bite size pieces
  • 1 finely chopped onion
  • 1 sliced green chili
  • 5 slices ginger
  • 4 minced garlic cloves
  • 1 cinnamon stick
  • 3 cardamom pods
  • 4 cloves
  • salt to taste
  • 1/2 tbsp vinegar
  • 2 tbsp sunflower oil
  • 3 bay leaves
  • 250 ml water
  • 10 curry leaves

Methods / instructions

  1. Blend the first 4 ingredients from the ingredient list using a blender or food processor until form a smooth paste.
  2. Heat cooking oil and saute paste until aromatic.
  3. Remove paste from heat and marinate pork with paste and remaining ingredients for 45 minutes.
  4. Heat oil and stir fry pork with the marinated ingredients.
  5. Cover and simmer gently until pork is cooked.
  6. Serve hot.
