Ingredients /nutrition
- 9 dried chilies, soaked in hot water for 20 minutes and drained
- 1/2 tbsp coriander seeds
- 1 tsp black peppercorns
- 1 tsp cumin seeds
- 350 g pork belly, cut into bite size pieces
- 1 finely chopped onion
- 1 sliced green chili
- 5 slices ginger
- 4 minced garlic cloves
- 1 cinnamon stick
- 3 cardamom pods
- 4 cloves
- salt to taste
- 1/2 tbsp vinegar
- 2 tbsp sunflower oil
- 3 bay leaves
- 250 ml water
- 10 curry leaves
Methods / instructions
- Blend the first 4 ingredients from the ingredient list using a blender or food processor until form a smooth paste.
- Heat cooking oil and saute paste until aromatic.
- Remove paste from heat and marinate pork with paste and remaining ingredients for 45 minutes.
- Heat oil and stir fry pork with the marinated ingredients.
- Cover and simmer gently until pork is cooked.
- Serve hot.
