Pistachio rice pudding recipe

Ingredients /nutrition

  • 2 oz long grain rice (Basmati rice)
  • 3/4 pt full fat milk
  • 14 fl oz full cream evaporated milk
  • butter for greasing
  • 3 cardamom pops
  • 1 cinnamon stick
  • 2 oz caster sugar
  • 4 tbsp roasted almond flakes
  • 4 tbsp roughly chopped pistachios

Methods / instructions

  1. Preheat oven to 150 degree C.
  2. Combine rice, milk and evaporated milk in a saucepan and simmer for 10 minutes.
  3. Meanwhile, grease an ovenproof dish with butter.
  4. Transfer milk mixture to dish and stir in remaining ingredients.
  5. Bake for 2 hours.
  6. Remove cinnamon stick and serve warm or cold.
