- 3 1/2 tbsp olive oil
- 1 finely chopped red onion
- 2 1/2 tsp garlic puree
- 1 tsp ginger puree
- 1/2 tsp ground turmeric
- 1/2 tsp chili powder
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 400 g sliced shiitake mushrooms
- 1 tbsp tomato puree
- 600 ml water
- salt to taste
- 3 tbsp chopped coriander leaves
Methods / instructions
- Heat oil and sweat onion until transparent and soft.
- Stir in garlic puree and ginger puree and cook for 50 seconds.
- Add in turmeric, chili powder, coriander and cumin and cook for a minute.
- Stir in mushroom, tomato puree, water and season with salt.
- Bring to boil, reduce heat, cover and simmer gently for 18 minutes.
- Add in coriander leaves and serve immediately.
