Mushroom in onion gravy recipe

Ingredients /nutrition

  • 3 1/2 tbsp olive oil
  • 1 finely chopped red onion
  • 2 1/2 tsp garlic puree
  • 1 tsp ginger puree
  • 1/2 tsp ground turmeric
  • 1/2 tsp chili powder
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 400 g sliced shiitake mushrooms
  • 1 tbsp tomato puree
  • 600 ml water
  • salt to taste
  • 3 tbsp chopped coriander leaves

Methods / instructions

  1. Heat oil and sweat onion until transparent and soft.
  2. Stir in garlic puree and ginger puree and cook for 50 seconds.
  3. Add in turmeric, chili powder, coriander and cumin and cook for a minute.
  4. Stir in mushroom, tomato puree, water and season with salt.
  5. Bring to boil, reduce heat, cover and simmer gently for 18 minutes.
  6. Add in coriander leaves and serve immediately.
