Curry leaves fried chicken recipe

Ingredients /nutrition

  • 450g chicken, cut into bite size
  • vegetable oil for deep frying
  • 25 curry leaves
  • Seasoning 1
  • 2 1/2 tsp corn flour
  • 2 1/4 tsp light soy sauce
  • pinch of salt
  • pinch of pepper
  • Seasoning 2
  • 2 tsp light soy sauce
  • 3 1/4 tsp oyster sauce
  • 2 tsp sugar
  • 3/4 tsp chicken stock granules
  • 75 ml water

Methods / instructions

  1. Mix well chicken with Seasoning 1 ingredients and set aside for an hour.
  2. Heat oil and deep fry marinated chicken for 5 minutes.
  3. Remove from heat and drain on kitchen paper towel. Set aside.
  4. Heat up 1 1/2 tbsp oil and saute curry leaves until aromatic.
  5. Coat chicken in Seasoning 2 ingredients and stir over high heat until dry.
  6. Serve immediately.
