Coriander mango chicken recipe

Ingredients /nutrition

  • 3 tbsp sunflower oil
  • 5 crushed garlic cloves
  • 450 g chicken breasts, cut into bite size pieces
  • 1 tbsp ground coriander seeds
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 4 tbsp lime juice
  • 4 tbsp finely chopped coriander
  • 1 ripe mango, cut into cubes

Methods / instructions

  1. Heat up oil in a non stick pan and saute garlic until lightly browned.
  2. Add in chicken and stir fry for 9 minutes.
  3. Add ground coriander and chili powder and cook for a further 3 1/2 minutes.
  4. Add remaining ingredients and stir briefly.
  5. Serve hot.
