Ingredients /nutrition
- 3 tbsp sunflower oil
- 5 crushed garlic cloves
- 450 g chicken breasts, cut into bite size pieces
- 1 tbsp ground coriander seeds
- 1/2 tsp chili powder
- 1/4 tsp salt
- 4 tbsp lime juice
- 4 tbsp finely chopped coriander
- 1 ripe mango, cut into cubes
Methods / instructions
- Heat up oil in a non stick pan and saute garlic until lightly browned.
- Add in chicken and stir fry for 9 minutes.
- Add ground coriander and chili powder and cook for a further 3 1/2 minutes.
- Add remaining ingredients and stir briefly.
- Serve hot.
